Battered maccheroni frittata. The maccheroni with meat sauce frittata is a tasty traditional Neapolitan dish, made with leftover pasta with meat sauce, eggs and cheese and pan-fried. As with many traditional dishes, there are many versions of the maccheroni frittata, which was born as a no-waste leftover dish. Traditionally, it is made with spaghetti or short pasta, such as ziti or rigatoni, and dressed with white or tomato sauce, without or without meat. J-MOMO’s version is white.
