Fusilli from Avellino. The preparation of real fusilli from Avellino, rigorously prepared by hand, is the pride of Irpino, handed down for generations. Avellino fusillo is a culinary stronghold of the province of Avellino. The original recipe in fact has never existed, also because in almost all the 118 municipalities of the Province of Avellino, it was handed down for several centuries by word of mouth and each area has its own minimum variation of how to make it. First of all, it should be clarified that the only factor is that Avellino fusillo must be “handmade”. The dough is made from hot water and flour or from flour and semolina. The skein is worked by hand and lengthened into small cylinders of about 5 centimetres which will be individually crushed with a movement from the bottom to the top, using an iron spindle.
