This specialty is very famous in the Sorrentina peninsula. The crocchè a metro is a Sorrentine specialty and every restaurant has it on its menu. The Neapolitan potato crocchè – best known as panzerotto – is a staple of the local cuisine, and it can be found in every fried food shop, along with zeppole. A simple potato croquette, with a soft cheese heart (provola or mozzarella), a pinch of pepper and a little bit of parsley. This version is called “a metro” because is longer than the traditional Neapolitan version.
