Fried pizza is definitely one of the most distinctive dishes of Neapolitan cuisine, especially in its so-called ‘Montanara’ version.
This tasty dish was created after World War II out of need: food shortages were common, especially in poorer households, and it is here that this simple recipe, prepared with just a handful of ingredients, such as tomatoes and mozzarella, was born and went on to become a staple of the Parthenopean tradition.
