Spaghetti alla chitarra is a typical pasta of the Abruzzese tradition. It owes its particular shape to the tool used for the production which is the chitarra or maccarunare. A chitarra is simply a series of metal wires arranged parallel on a wooden plane which allow the shape to be made by exerting pressure on the threads thanks to a small rolling pin. Unlike traditional spaghetti, this spaghetti has a square shape that tends to absorb sauces more consistently.
